I know this is long but I figured do it as one post. Thanks for any feedback Howard

Cant help you with the carb controls
Coolant and oil pressure sender hook directly up to the senders
Im not familiar with 1 wire univ alts. The old alt wire is a fused 12v IGN source. If the new alt is excited by a simple 12v IGN, then sure. Some alts are excited by a lower voltage and require a resistor. For those, 12v will make them work, but they burn out after a week or so. Make sure before you burn the alt up
Grounds can be moved wherever you please. Just be sure in the end you have the body connected to the engine with some sort of ground strap all leading back to the battery
Purple is starter solenoid wire. This goes directly to the small lug on the starter
Two big red wires are main 12v constant for the interior and front harness. Without those, your car's electrical system is dead. I like to move these off the starter and to a power dist block located somewhere in the engine bay
Good job on stripping the harness, looks very clean and neat. Refer to the carb board if someone doesnt fill in the choke wire functions here. You may get by using a factory diagram

The carb wires appear to be properly identified. Didn't you tag them when you removed them?
The pink ignition wire will go to the "BATT" terminal on the coil-in-cap HEI distributor, and white to "TACH".
