use a infrared temp gauge and check the neck of the thermostat housing.
I bet your temp gauge is wrong. there's no way your engine can over heat if the thermostat is open and coolant is flowing.

sounds more like it's not getting fuel when you hit the gas man.
could be a fuel pump, could be the carb needs adjustment.
pay special attention to the accelerator pump and float level.

those bosh plat are the biggest pieces of crap I've ever had. they made my car miss something awful.

go with delco plat or NGK plat or iridium if you want long lasting good performing plugs.

I also wanted to add the pressure should jump almost instantly up to full psi when you turn the key on. not gradually climb. that's another tell tale sign the pump is weak.
