60 over's all you can go.
I know, I asked the same question a long time ago. I figured I could get away with boring it like a .25" over, or whatever the 350 has, and end up with 5.7 liters. Nope, there are water jackets in the way, dammit.

.060 is the largest standard overbore. Back in the day before cost cutting took extra metal out of blocks, small block chevys were being bored over twice that. .125. That is where the 302 chevy came from. People were boring out 283s and calling them 301s. Chevy later made one with a 283 crank and a 327/350 block.
