hesitation need help please

just bought a 1982 camaro sport with a v8 305 in it and got it out the shop on thursday. (needed a new carb but just rebuilt it instead) my mechanic said the fuel in it is horrible and needs to be run out. ( he said i should drive until on empty because tank was hard to drop w/o dropping exhaust, but i decided to siphon it out.) after i siphoned it out i bought some Gumout fuel cleaner and filled it up with 91. ran good for about an hour then started to to hesitate when driving and taking off from stop.( would even die on me and would start back up sometimes but sometimes it would take 5-10 minutes.) changed fuel filter and ran good for about an hour again and started to do the same. changed the fuel filter again because it was dirty and ran really good but only for about 30 minutes. do you think i should just keep changing the filter (mechanics idea until fuel is clean) or do you think there is something else wrong??

i was trying to check the codes and see if it was something else but have no clue how to do it correctly. I really need help!! i have lots to learn so please give your opinion. thanks in advance.

What I would do, is empty the tank. Fill it up a little. Than run the fuel pump with the filter off into a bucket NOT TO THE ENGINE. Keep doing this until you think necessary. There for you don't need to keep going through filters.

How will he do that with a mechanical pump?

Change the fuel filter again and add a clear fuel filter in between the rubber fuel lines so you can tell when it's getting dirty.
