Redoing fuel lines. I'm assuming I just need 1 line and 1 vent?

PRENOTE: I swapped to a carbed engine.

So, I'm moving my fuel lines to the passenger side. As of right now I have no charcoal canister and no return line. I'm assuming I can just run ONE line from the tank to the (mechanical) fuel pump, keep the vent that's already there, and just block the rest. Am I right?

So long as you are only using a mech pump

I would suggest that you keep the CCP system.

It will eliminate a lot of fumes from being released from the tank. Easiest way to go is to use a canister from a truck, say a '90 full size Chevy van (they don't use a solenoid). And be sure to plumb it to 'ported vacuum' on the carb.
