Stock of Custom

I have a 1991 Camaro Z28 that is currently a very dark graphite grey (almost metallic black) that used to be black. The paint job was poor and they did not paint in the door jamb area, engine bay, etc. I will need to repaint it some day but do I return it to stock or keep it this color? I like the idea of stock but I like how this color stands out the headlamps and grille blackout.

Also, do I wait until I have the space to strip the car down or do I just take off most and tape off the rest like the interior, trunk, etc. I have never had a paint job before and am not sure what I should do. I think I want to strip it so it looks factory but it seems like alot of work (especially things like the electrical in the engine bay.
