No ECM and I need fan help.

I took out my ecm and all that block box crap.
I have an '87 firebird and I'm looking to go all mechanical with no computers.
I'm currently hookin up my multimeter to find all my wires and **** so I can start getting it all sorted out.
Now see my problem is after the engine control pieces are out how can I control the fan beside the obvious way of having a crappy switch.
I would like to have it be temperature controlled but what wiring and equipment will I need.
I have wiring schematics for my car so I know where it all is.
To sum it all up I'm bypassing everything in terms of sensors and computers that come with it stock and now I need plans to replace them.
