Why the hot temperatures?

I was curious why Chevrolet set the cooling temperatures so high (and at such a variable rate)? Temps will rise up to 235 degrees, then back all the way down to 195-200. Why? Is this for emissions?

I will probably install a 195 coolant switch (do they make them for that temp) this weekend if I can find one. When I do this, then the ECM will control the primary fan via one coolant temp, and then the secondary fan via the second coolant temp? (Or is there just that one sensor).

Thanks for the information. If you have any part numbers that would be awesome. Iv been through the archives but most of the questions are regarding 160-180 switches and t-stats. I would rather keep it at a 195 degree temp, similar to my truck.

Edit: By the way, if a 195 degree seconday coolant sensor is not available, I think I might move the flex-a-lite fan controller over from my truck to the camaro and use it instead. This way I can hook both fans to it and let it control them (and manually set it to 195, 200, whatever I decide).

They set it high for emissions purpose but a hot engine will have higher cylinder pressures which can make more power too. I believe one fan is controled by the switch and the other one by the ac but i could be wrong about that(single fan setup on mine).
