Is breaking in engine w/o secondary fan, ok?

Engine: LT1
Transmission: Auto
Axle/Gears: 3.23
Is breaking in engine w/o secondary fan, ok?
My car is at the shop getting the motor rebuilt (long story, don't have time, work with me please
)
Anyway, the passenger side headers that I put on have no clearance with the temp sensor on the block. The mechanic is freaking out saying he won't warranty the motor if the engine overheats because the fans won't turn on. Here is what I told him for the time being:
"The primary fan is controlled by the sensor in the intake manifold. So the primary fan should turn on. The temp sensor in the block ( no clearance for to be connected with wiring )controls the Secondary fan. But if you turn on the AC both fans should turn on. So during the break in period, just turn the A/C on. And let me know if it overheats."
He says, " ok, but I will keep my eye on the temp guage and won't let it overheat".
So am I correct so far?
Now for PART II:
What can I do if that doesn't work? A friend at pacesetter told me to buy a 3/8" NPT 45* elbow. Do you guys know if that will take care of things permanently?
Or can I just have the coolant temp sensor hole plugged and rig up a fan switch? Basically do I need that CTS to work? Again I have headers and there is no clearance.
Please let me know if you can help me out. And please no "Do a Search" response. I've tried. I think my question is a valid question to ask.
