I think the stock "fan on" temp is around 138'F so it may just need to get a little bit hotter to turn the fan on.

Well when you are driving has it ever passed the 3/4 mark on the temp guage?
If you think it is getting too hot (I don't like my engine going over 220'F) you can either install a lower temp switch in the passenger side head or install a manual toggle switch in the cab so you can turn it on when ever you want.
If this is what you want to do find the wire going to the temp switch in the passenger side head and tap into it (you can but clips that go over the wire and cut/join a new second wire into the circut) then lead that into the cab where you can mount a toggle switch and ground the other side of the switch (to ground the fan circut) so it turns the fan on when the ignition is on.
