New Head Gasket

A couple months ago I blew a head gasket on my 383 stroker. I just got the car running again and when I noticed that the temperature is reading higer than it did before. Before the blown head gasket, the temp would stay around the tick mark between 220 and 100. Now the temp stays on 220 all the time. I have gone through everything in the cooling and replaced the thermostat and the lower rad hose. Everything else is good. I do not have an air dam on the car and never ran one before.

The conclusion that I came too is that it's the temp gauge because i took a digital thermometer and placed the wire between the thermostat housing and the upper rad hose. The highest temp reached was 184.

I just don't understand why the gauge would be doing that, it never did it before. Anyone have any ideas?
