Gauge problems i think/hope

Hi everyone, last spring i rebuilt the 305 tpi in my car and now the gauge max's out everytime i drive it whether i'm driving around town or out on the highway. so i put a new rad in and it is still doin the same thing. I took a probe and stuck it between the upper rad hose and thermostat housing and it said the temp was 105. then i thought maybe it was the sensor replaced it, same thing. then i remembered that when i took the car apart i destroyed the heat shilds around the exhaust manifolds and i think that what might be doing it so i took a tin can stuffed with insulation and put it over the sensor to try and block some heat and still it says over heating and a electric thermometer says it is still 105. any ideas?

Unplug the connector from the coolant sensor and have someone sit in the car and turn the key, then ground the wire somewhere in the engine compartment(like the body) and ask them if the needle moves. If it doesn't move then your gauge is either messed up or somewhere in the wiring to the gauge is messed up.
