fan issue or faulty gauge?

fan issue or faulty gauge?
i was sitting at mcdonalds today waiting to get my food and i happend to look down and noticed my temp gauge was right under the red mark, it never moved nor did i hear my fan kick on( iv only heard it once honestly) well after i started moving the temp started to drop and stayed actually below the 220 mark, reason i bring this up is like i said iv only heard my fan turn on once while i was driving it, now i dont really take the car out alot of places and mostly drive it around town to point A to point B but during my engine swap the motor i was swaping in had a plug in the passenger side head where the fan switch was that i could get out, so i didnt put the sensor in because i had read that i had another sensor that would kick the fan on went it got to the temp. also my fan doesnt kick on when i turn on my AC( my ac doesnt work now and i suspect it has to do with that switch anyways) but it kicks on when i run my codes when i jump my ADLD ports.
so i guess my questions are, should i worry about the gauge almost spiking? and should i trust my fan and just assume it works? im going on a 2 hours trip saturday and i dont really want to overheat on the way down there.

you need to check the wiring at the fan and relay. here is a schematic of yours. it is ecm controlled.
