Can you define hot for us? 200 - 220 is not abnormal at an idle. Then there's the accuracy of the factory gauge to consider. Tell us a little more about what's happening.

If the new motor is in proper tune (and not too radical in nature) the factory radiator should be more than up to the task.

What was the factory induction system?
What pump?
What thermostat?
What temps is it reaching?
When is it overheating (cruise, idle, acceleration, town)?

Is it carbed or TBI/TPI?

I'm in need of the same advice dont mean to hijack the thread but mine is almost identical and I c this is a week old. I have a 84 z ho just bought a remain stock long block all factory,all new sensors knock coolant new water pump and just bought a new rad and T stat .I been trying to break it in and run it 20min at 2k but it will only last 5 mins and get hot enough for the check engine light to come on .My gauge I dont think works it said 160 the fans did come on,I guess the come on around 225,thats to hot for me and a new engine. Like I said all stock,wanted it to b factory .What I'm I missing .

With the radiator cap off, run the motor and watch the coolant flow. It should bubble up and out then the level will drop. This is burping the air out of the cooling system. 3 or four of those bubble outs should steady it. Refill and yiu should be good. The air bubbles escaping wont let it cool properly if they're trapped in the system.
