can i substitute a 29c256 120ns chip for a

is there a way to get my pocket prograqmmer
to burn / read at29c256 120ns chips ?
i am making a wild a$$ guess that the only
difference is the speed that they run at .

i know that the chips i have always used are
at 29c256 90ns , i have a few of these others
so i am trying to use them if i can

Yes, you can program those chips with the Pocket Programmer. The 120ns refers to the time to read from them, not burn/program them. All of the AT29C256 takes the same programming time. Overall, program away and it will be fine.
