timing

what is a good starting point for adjusting the spark tables? Does it pertain mainly to the set-up that you are running?
What is a good way to decide max timing etc?
I know I should start low and work my way up but how low?
I am running 10.5 compression and have not started the car yet but I don't want it to detonate itself apart on initial break-in so I am trying to find something safe to start it with and ideas of a good starting point?
