You can determine the capacity of an unknown relay but it’s not worth the time.
You would have to analyze the contact metal composition and factor in the mass and area of the contacts.
But, if you know the purpose of the original relay you can estimate from there.
Anyway just find the draw of the item(s) you want to operate and buy appropriate relays.
If you have unknown relays which you would like to make use of, use those for the smaller draw items.
