EFI to Carb wiring removal

I have a 91 Trans Am that was originally fuel injected.

The car is morphing into a street/strip car. Supercharged & carbureted 383, 6spd, cage 12bolt, etc

I want to get rid of any excess wiring from the engine compartment.

I need to keep basics: keyed ignition, heat, power windows, wipers, defrost. Head & tailights, directional a, etc...

is there a company that makes these?
is there an easy way to just eliminate what I don’t need ?

The ecm if tpi is a Vss buffer . Dakota digital makes a sgi-100bt if retaining stock speedometer.

When I carbed the formerly TPI 86 IROC I found the wiring was in two distinct harnesses. One came from the ECU and entered the engine bay just above the passenger side inner fender. There was nothing in this that I needed as I have a mechanical speedometer (referencing the VSS issue addressed earlier). I also reworked my own stand alone power and controls circuits for the fuel pump (went from in tank to externally mounted) as well as the electric fan. So the ECU harness was removed.
The other harness originates at the C100 bulkhead connector on the firewall. This held the headlights, signals, wipers and a few other switched and unswitched sources. I kept that as original for what I needed and used the spare circuits for whatever miscellaneous circuitry that was added.
I've a homebuilt gauge panel and all of that wiring was also added. As a result I have the factory stuff for the ancillary equipment (lights, etc) and a 2nd harness built for the engine sensors, gauges, ignition box, etc.
I'm not aware of anything aftermarket that addresses this somewhat unique aspect of your (or my) build.

The computer harness is long gone. When I get the opportunity, I'll find or take some pictures of how the "chassis" harness played out. I've taken that harness and added several circuits of my own so it may not be representative of a stock version.

When I bought my car the previous owner converted to carb and disabled the hvac....I too would like to know where to start looking to hook this back up and in which harness it is run....Really annoying not even being able to turn on the fan for defrost. I have not looked into this on a schematic yet just being lazy but knowing which harness contains the wires could be a simple visual inspection to see if they are still there or removed all together.

IIRC, the HVAC is sort of a hybrid between what comes from the C100 firewall connector and the harness from the computer.
FWIW, I took my AC equipped V6 chassis, removed everything AC and V6 related and started from scratch. That said, keep in mind that the C100 harness is more or less the same from V6 to V8. There's not a lot to mess with there.
There are plenty of online schematics available. From those you can figure how to make your heater /AC blower work without the actual AC in place. Or something in between as the case may be. These schematics are all model and model year specific.
