This is the oft-discussed "V6 to V8" swap. It ain't exactly easy, but not impossible, obviously. Look over posts on this forum, the details have been spelled out several times (may have to go back a few months).
About the only thing non-typical about your situation is being sure to use a 153-tooth 2-piece rear main seal flexplate. A part intended for '82-85 3rd-gen V8 will do the trick.
Question for you, though: Exactly what TH700 have you had "rebuilt for racing"? Your 3.1 tranny won't work on a V8.

Had a better idea recently. Does anyone know where i can find a wrecked IROC in the SO CAL area. I read somewhere on the internet that a guy did a motor/dash swap out of an IROC into his SC. It seems easier and cheaper. thnx
