Cleaning 25 year old engine?

Cleaning 25 year old engine?
Hey guys...
I got my 350 into the car about 3 months ago, but during the swap, i had no time to do any detailing and cleaning beyond what i knew had to be done. Since then, i have tried litterally everything i could think of to clean all the caked on dirt, burned on oil, etc. I've tried engine degreaser (Gunk i think), soap, even just plain water both on a rag and a pressure washer. The worst stuff in on my valve covers. I have used a 2.5" wide paint scraper on them and even that will not take it off!!
Nothing is helping. What do you guys suggest? I'm totally lost now.

Simple Green full strength, or that Castrol cleaner - forget the name, but you wear rubber gloves while using the stuff.

theres this stuff that dupont makes. its called 3812s fast drying enamel reducer. i used that on my engine bay to get the caked on dirt off.

I used it diluted to clean some pistons I was reusing.

The best way I've found to really restore old parts is to remove them, have them bead blasted and then repaint to match the original colors. I have found products from SEM and Eastwood to give excellent results. It sounds like a lot of work but the results are well worth it.
