Transmission: T56, 5spd auto
Axle/Gears: 10 bolt 3.42(as long as no breaky)
LT1 ?
Would I be able to take an LT1 out of an Fbody and put the corvette acessory brackets on it to use the vette routing?

And are the wiring harnesses interchangeable from any of the years?

You can use the vette brackets, but purchasing them are expensive plus you will have to use the PS pump, AC compressor and alternator from a vette as well. Best thing to do is use the complete F-body setup, wiring, PCM and accessory setup.

Are there any years where you can interchange the wiring harness?
For example, using a '94 harness on a '95 engine?

you can use a '95 harness on a '96-'97 engine, but not a '96-'97 harness on a '94-95 engine without swapping things like the timing cover and opti pigtail for the '94.
