What to ask Engine rebuilder??

Engine: 305 TBI
Transmission: T-56
What to ask Engine rebuilder??
Still trying to decide between a new ZZ4 short block, or a rebuilt 350 or 383 with forged crank and forged pistons. I want to go to a few engine rebuilders in the area and ask them on prices, etc. What kind of questions should I ask? And what exactly is "balanced and blueprinted"?? Would it be better to buy my own rebuild kit with the forged parts, and have them put it in? Also I see different kits for different sizes...what does that mean? Maybe some sights that would give me more info? Also, Im looking at about 400-450HP N/A...then a small shot of nitros (100-175HP)....would the ZZ4 short block beable to handle this?? This question is why im considering getting a rebuilt with forged pistons....and of course the 383 for the extra cubes...any input? Thanks
