get a good schematic from a chilton manual. your local library should have a ton of them so no need to buy. do buy a test light and follow the wiring from the switch to the bulbs.

The lights and gauges go through different harnesses and connectors than the computer stuff.

The computer harness goes to the passenger side fenderwell. The two plugs you're talking about on the driver side are the lights and non-computer engine stuff that you'll still need. There is no need to unplug the ones on the driver side.

The ignition power, tach wire, oil pressure gauge, engine temperature gauge, starter wire, all go through that "C100" connector on the driver side, next to the headlight connector. The chassis power does as well, through the two large red wires connected to the battery cable at the starter. None of those wires need to be disturbed when removing the fuel injection system.
The computer related wires are all routed to the other side of the engine compartment.

I don't know why you wouldn't use them. Even if you're using aftermarket gauges, if they're electrical, you can use the factory wires to get the signals from the engine compartment to the dash.
I certainly wouldn't run new ignition, tach, or power distribution wires. Why not just use the factory wires?

One is for now.
Would have been nice to know this was intended to be a drag-only car. So, you just need headlights, engine power, tach, and everything else will be mechanical? If that was the case, I'd run all new wires myself and run a stand-alone switch panel.
