2.8 v6 to 383 stroker
idk how hard it would be to swap a 2.8 to a 383 stroker motor.
would it be easyer to swap a 4.3 than a 383
and will the insurance go up or down if i put a v8 into a v6 car

Personally, I'd say it would be easier to swap in a V8 than a 4.3 V6, since the V8 is at least a configuration the factory used in 3rd gens.

Not too hard, motor mounts have to get relocated and you have to change the fuel pump and trans (depending on trans may also have to change trans mount, cross member, and I'm drawing a blank on the name of it but the support that runs from the trans tailshaft to the rear axle). And invest in a new rear and front suspension.
I'd go with the V8.
