tomorrow I'm putting on the cat-back and gutting the cat. I've heard that the mixture is off after you do this, can I put in a better O2 sensor, if i can what size?

Thec cat converter has no effect on the O2 sensor...its vice-versa. The O2 sensor helps regulate the exhaust gas mixture so that the cat conv can do its job effectively. Gutting the cat will not affect how the sensor operates.
With that being said, use any type of O2 sensor that will fit your car.
