Cat-back to a true dual exhaust

Hello. First off, I want to apologize for my incredible lack of knowledge. I'm trying to learn, but I still might be way off. Anyways, I've been looking at my car (and '87 Camaro with a 305) and reading the forums, and I think I figured out that my car has a cat-back system (goes from my manifolds into one pipe, then into the converter, then out of two pipes. Is that cat-back?). I was thinking about getting something done to it, like true dual exhaust. Will this make much of a difference, sound wise or performance wise? Thank you all for the help, and sorry that I don't know what I'm talking about really.
