I know that there were 3, XXX and some odd 87 Camaros that were painted code 51 yellow, but is there anyway to tell how many were Iroc's??

The number of yellow '87 IROC's is between 1 and about 3,000.

GM kept records of how many cars were painted what color, but the records are not detailed as to how many Z28s, IROCs, LTs, or Sport Coupes were a particular color. ,
