For best 1/4 mile performance, a combination that gets you across the finish line at or just after you reach your maximum rpm.
I doubt the S10's 7.5" diff will survive.
Start at the back and move your way forward. Build a proper diff, upgrade the transmission and driveshaft. Finally build the engine. Stuff the tallest and widest tire possible under the fenders then adjust the gearing to get the best performance.

Not to be insulting here, but I'm wondering if you have the best cam for your application. Your lift numbers seem a little low for the best power so I'm just curious if you consulted a cam manufacturer to help you select one. Regardless of that, I think you've got a strong combination in your hands just wondering if there's a bit more power you could gain. Alright now on to tires. Wish I could help you out with the appropriate size for your application, unfortunately I don't have experience with an S10. I will tell you that it is possible to go too big. The bottom line is you need a tire big enough to hook hard and stay planted. After that point, however, if you keep going up in tire size as a way of changing your final gear ratio (bigger tires to give you more top end) you'll put additional unnecessary stress on the car (or truck). Once you get a tire big enough to hook, it's better to change your rear gear to cross the traps at the appropriate rpm. Getting your suspension setup right is every bit as crucial so you're not trying to overcome a bad suspension with bigger tires. Unfortunately, my method has always been some trial and error with tires. Best of luck and I sincerely hope someone can give you an actual size that works well for you instead of all the theory I just did.
