Need some help with sizing of ET Streets

Transmission: 700R4
Need some help with sizing of ET Streets
I've did a search on here. Pretty much figured out that running a 15x8 with a 27 or 28x10.5 will work no problems other than being very close if someone you run a rear disk system.
I was thinking about running a 15x10 and trying to fit a 27 or 28x11.5 or 12.5 but hopefully not having to do any modifications to the wheel well. Also, both would use a 5.5 Backspacing.
Lastly, if the combos above do work, does the tire stick out at all or will it look for the most part normal.
These will be used for track only.
