Transmission: TH700-R4
Will these M/T tires fit my 91 Z28 rims?

Will 27x11.50x16 M/T sportsman pros fit my 91Z28 with 16x8 rims

Usually you need to stay within one inch of the wheel size. Ant more and the rim will cause the tire to deform. Its no use running a bigger tire unless you can put it all on the ground. The factory wheels are 8 inches wide so the very biggest you might squeeze is a 10 inch wide tire. I would recomend a 9 inch.
