Re: what alignment specs for my car
For typical street use as yours sounds like, shoot for:
L - .5° neg camber, 4.0° pos caster
R - 1° neg camber, 4.5° pos caster
toe - about 1/32" (.030") in
To center the rear, adjust the Panhard bar length until the rear is centered. (duh) Pay no attention to the tires vs the fenders; fenders are just trim and their location is mostly random especially if the car has ever been damaged on the side. Kind of like, you don't level a house foundation so that the edge of the dining room table cloth hangs level; you get the foundation level TO ITSELF, then adjust the table cloth to that. So ignore the fenders. If they bother you, pull the one that's been bashed in, out to where it belongs, later. Set the brake backing plates to be equidistant from the front LCA mounts on the "frame" (I use the term loosely). Those are the actual WORKING parts of the car.

Sorry to sound stupid but I just don't know what to look for when centering it... I need like a pic or video on how to align it and knowing when its aligned...

Re: what alignment specs for my car
Just center it on your fender lips. Technically speaking, at that point what you ideally want is the back side of the rim lips to be equal distance from the LCA's. It there is a difference then the chassis/body is tweaked.
It is MOST important that nothing rub through suspension articulation. This takes president over actually squaring the chassis perfect because of safety issues of cutting a tire against a fender lip.
