Roll Cage

How hard would a roll cage be to install on our cars, and will it stiffen up the car like S.C.?

you have to strip most if not all the interior out. SFCs will stiffen the car way more than a cage will

Car: '86 IROC-Z + Misc. project cars.
Engine: Supercharged + Nitrous TPI 355 CID
Transmission: Art Carr built Th700r4
They are not very hard to install if you are (or can get the services of) a decent welder.
Durring the install you do have to remove the seats & carpet and remove or cover anything else that you don't want to get weld spatter on durring the install.

Again, note my difference here. I say a well engineered cage is leaps and bounds ahead of a simple set of SFCs. A good cage incorporates the equivalent of SFCs it's just that they're simply on the top of the floor rather than below it.
