Is the dipstick going into the tube right and into the block?

Drain the oil and see how much comes out. But before you do that stick a hanger inplace of the dipstick and see if it reads anything. Your dipstick may be to short. Stranger things have happened.

Did you just switch to a 8-quart oil pan?
That might explain dipstick being too short now.
Did the dipstick tube come partially out of its' hole in the oil pan flange?
Tube should be bolted to something so that doesn't happen.
