Car stutter on acceleration

When my car is not warmed up and I press the gas the car stutters for a brief second (the rpm drops and then comes back up) as I accelerate. For example accelerating to 2000rpm this occurs:
500rpm idle -> press gas -> 1000rpm -> stutter -> drops to 500 rpm -> continues on normally to 2000.

Once the car is warmed up it never does this but does anyone know what could be causing it?

My car has an edelbrock 750 carb, and until it warms up to about 150 or so it runs like ****. But after you get it warmed up I havn't had anyone take it down yet. Just let the car warm up, some cars are cold natured and don't run well cold. One question I have is has it always done this or is it something that just happend??
