I've got a shade under 30psi on the oil when cold and about 18 when hot on 10W40 Motor Oil. I just installed a new pressure sender recently as well.

My coolant temps run between 185-195, and it'll get near 220 in hot traffic. I'd say anything more is too much.

They're all relative though. I've seen my oil pressure dip to as low as 8psi and as high as 33psi. Coolant is pretty steady now with a new radiator and 180*F Thermostat and pressure cap, from the clearance rack at K-mart, for a buck each.

'86 TA, Mobil 1 15W50, 60 PSIG cold, 45 PSIG hot. Coolant remains at 205°F maximum at ant temperature with the AC on full. Before I changed to a 180°F thermostat and different fan control, it would routinely reach 235° under those same conditions.
