A new engine often will consume extra oil while it is breaking in, until everything loosens up a bit. How much oil has it consumed on the dipstick?
The "grayish" smoke can be a combination of "blue and black". The black would indicate a slightly rich situation, the blue would be oil. However, if you previous engine burnt a fair amount of oil or had an "oily death", I have found it takes awhile for the exhaust to fully clean themselves.
But I would monitor the dipstick to determine if it is indeed consuming oil and if it is unreasonable. BTW, you may want to consider changing the oil again...it could indicate that "engine lube" that is used in new/rebuilt engines may still be hanging around from your 500 mile oil change.
Consider going to synthetic at 5,000-10,000 miles. But for now, stick with straight 30W oil. This is what I have always used on any new/rebuilt engine I have owned in the last 30 years and it has always given me a long lasting motor.

What Glenn said is correct. There's nothing else to it...
