coolant out the exhaust? or is it just water?

If it's coolant then yes it could be a head gasket or a crack in the head.

could be the intake manifold gasket too. The coolant flows through it close to the front two intakes. I had a coolant leak in my gasket (leaked out the front as opposed to toward the cylinders) but it only showed itself when I drove it hard - i.e. when it built up enough pressure in the cooling system to get past the gasket seal.
