An odd problem

Ok so my car will start normal and everything, but once and a while I turn it on and the RPM varies. It goes up to like 3000 rpm and then drops to like 400 rpm. and it keeps doing it.. It eventually (if I don't hit the gas) stalls out. Eventually it'll stop, I'll get a service engine light which only shows a "coolant temp" sensor error, and then it runs normal again.
anyone experience this and what was happening?

If I hit the gas while it's doing it's bouncing the car starts smelling like a lot of excess gasoline.
Let me know if you guys know anything.

From what I understand, the coolant temp sensor can cause all sorts of things to go heywire.

Change the sensor and the problem SHOULD go away.
