Pulling an engine at the junkyard

I am getting a 350 from a Suburban. It is carbed so I shouldn't have too much trouble making it replace my 305 directly. I have never done this so I have some procedural questions.

So far I have taken off the six bellhousing bolts, the four torque converter cover bolts, five of the six y-pipe to exhaust manifold bolts, and three flywheel bolts. I think I stripped the exhaust bolt. What can I do?

I think my next move is to undo the engine mount bolts, but I wonder if I should get the hoist and hook it up first. The mounts seem to have a nut one size and the bolt on the other side a different size. Is that right? The bolt is a 5/8", and I think the nut is 11/16. What is the best way to get these done? Keep in mind I don't have an impact wrench to zip them out.

Is that everything I can do under the truck? What's up top than I have to plan for? To what do I connect the hoist?

For the stripped bolt you buy a special socket from sears to get it out, or you can drill it out. Support the engine with the hoist before undoing the motor mount bolts. I found that a 1 ft extension on a rachet was good for the nut or bolt on the back side of the engine mount and either a box wrench or another socket for the front bolt. I think that is how i did it. The best was to hoist a carbed engine is with a carb plate. Part number SUM-G1015 on summit racing. You take the carb off and attach that plate to the intake manifold. Or you can attach the chain to intake manifold bolts.
