a stroker 305
Can you stroke a 305 to a 383, or can you only do that to a 350. whats the difference in the 305 block and the 350 block

A 383 is a 400 crank (3.75" stroke) in a 350 bore, with .030" overbore. If you put a 400 crank in a 305 block, with .030" overbore you get a 335.
The difference is the 305 has a 3.735" bore whereas the 350 has a 4.00" bore.
And no, you cannot make a 305 into a 383. it is physically impossible to bore a 305 by ~.3xx." It is also highly non-cost efficient to put a 3.75" crank into a 305 considering the same amount of work/money is needed to put it into a 350 block, and get far better results.
