I'd first check the radiator, see if it's not blocked off, or rusted.

Then check the condition/level of the coolant.

Then, check to see if the thermostat's not stuck.

THEN you can check the water pump.

I'm thinking the new stock pump and fan won't keep up with the hp motor?

I had all new stuff just like you, and couldn't keep my 350 cool either. I swapped the lifetime warranty POS water pump out for a Stewart Stage1 pump www.stewartcomponents.com along with one of their high flow thermostats (same temp stat as before though) and have been very happy. Runs nice and cool now...

What mix of water/AF are you using. Try 70/30 water/AF , or even more water. I have seen several cars that would run hot b/c of stronger AF mixes.
Also, is your radiator cap new? If not replace it, cheap insurance. This is always the first thing i replace on any car i buy, just because i have had way too many strange cooling problems caused by faulty caps.

Check those 2, then worry about a new WP.

A little bit more info is needed. What year is the car, what engine was in it before the 350. What year is the 350. Etc.
