The main oil pressure sender screws into the block just above the oil filter. The 2-wire connector that plugs onto it (round, as you say) should be poking out of the wiring harness somewhere not too far from there.

Some (not all) 3rd gens have another sender up on top of the engine, at the back, just to the driver's side of the distributor. I believe that one is a single-wire sender, just like in Chevys from the days of old.

It's in the main harness that comes off C100...big electrical connector on the firewall drivers side near the brake booster.

Start at the connector and trace your way along the split of the plastic loom, you'll find it.

Should be tan. Not to be confused w/ the tan one with a white stripe, just plain tan.

Cool beans, get that thing running! I'm in Morris Plains and it's getting boring down here.

If you haven't called Bruce's Speed Shop yet, give him a shout. He's in Rockaway and has all things carb. A little bit of a road trip for you but worth it.

Bruce keeps a good inventory of both carb and FI stuff, and usually by the time you add Jegs/Summit $8.95 handling fee his prices are competitive.

He also has a dyno, wideband O2, and Holley jet kit. I've seen him doing carb tuning and jetting on the dyno and it's a very clean process.
