setting to what you engine wants not what you think

when i set my iac i set it to idle around 700 rpm becasue i have a 350 that produces 2 times as much as the stock 305 did and it still did not want to idle very good at that rpm but that is what someone tolled me what vortec wants to idle around. when i was setting it i can recall i ran much better when it was higher rpm than what i set it at but i thought it was way too high the higher the better, but what the subject says should i set it to what the engine wants or what i think it should have because it may go all the way up to 1200 rpm and i dont think it should go that hight.
