Evaporator Canister removal...

Evaporator Canister, i have heard that you can take it out without any problems and that you can plug up all of the holes that go to it and it will be fine. My question is why is the Evaporator Canister taking fumes out of the gas tank? If you plug the lines that come from the gas tank will that not cause a fire hazard?
The reason why i am doing this is i am trying to get rid of all the unnecessary stuff that i don’t really need, i have got rid of all the emission stuff and many more things, since i got a new engine i want to clean things up.

I broke mine when I was unhooking the engine to replace it, so I left it off for a few weeks and I now have a brand new one installed. I installed it beacuse the entire car smelled like gas almost like is was running very rich all the time. I did a lot of work and the car would smell like gas when I would pull up next to other cars just didn't give off the right vibe I felt. Just my experience.
