I have a '93 Beretta with a 3.1L V6 and auto tranny. My radiator hose busted and my anti-freeze leaked out. My "Low Coolant" light came on (first time I have ever seen it on). I have replaced the hose and replaced the thermostat. Everything seems to be working fine now, except the "Low Coolant" light will NOT go away. I have unhooked the battery to try and reset it
Still it remains ON
Anyone have any ideas on this...

I know this sounds like a dumb Q., but did you fill the radiator while it was running? Did you let it run about 15 min. with the cap off the rad.? Did you fill the reservoir?
I have a 95 Monte that did the same thing. Although the coolant was going into the oil pan on mine!!!!!
The intake gasket gave way. I got the first "Low coolant" light when I was about 40 miles away from home. I filled the reservoir with water at a gas station. About 5 min later the light was back on again. So somehow it knows it's low.
I also had a hot-cold-hot-cold fluctuation from my heater on my car (the Camaro). The guys on here told me to let it run about 15-20 min with the rad. cap off to free the system of all air pockets. It worked.
