rough idle when hot & temp reading inaccurate (related)?

91 RS v6 189cid 3.1L auto trans.

did an intake manifold gasket, new lifter (valve readjusted) job.

and on its way I put a 180 thermostat. I run a single stock fan system where
it turns on around 230F.

since the above job was done, my temp reading never goes past 160.
but I can tell from the oil pressure going down that my car is getting warmer than that!!

addition to that, now I have rough idle when my car is warm(it still reads 160 or below but I know when its warm)

so Im guessing a bad coolant temperature sensor or I screwed a wire or something?

I finally found a reading about how bad temp sending unit can cause rough idle, is this true? caz mine is only rough when warm, idles perfectly at cold!!

thanks for any help!!! !
