350 would work great, you'll probably want to port the chambers to enlarge them, and help the flow a bit.
For a 383 the chambers will be too small unless you REALLY open them up, and use dished pistons. You'll have to do a hell of a port job, or else they won't flow enough air to make a 383 all that much fun, or cam it up like crazy.

Re: 601 heads

They are great heads for a 350, I had a set on mine last summer (changed to 200cc aftermarkets) and I loved them. The engine had around 11.25:1 CR and made a TON of low speed torque with the XE274 cam thats in it.

Mine had 1.94/1.60 valves installed, and screw-in studs and guideplates. Had the valve guides cut to handle .550 valve lift. These are some awesome heads for a factory head. They replaced a set of 882 heads and I gained a full second out at the track from that alone, plus the gas mileage actually got slightly better, though it now needed premium instead of regular.

Use the 601s, they are great heads for a 350. Probably wouldn't be a good match to a 383 unless you use a set of reverse domed pistons to drop the compression down a bit.
