car almost dies after wot run

I finally have my stroker put together... its a carbed 383 lt1. it pulls hard as hell but if i go wot and let off the car idles down so low that my brakes no longer work properly and my oil psi drops to almst nothing then slowly comes back up. its not a big problem on the street cause i dont just let out of wot completely but at the track when i let off i dont have brakes and its a little unnerving. any ideas on what could be causing this? it also happens if i punch the throttle then try to come to a stop real quick.

You should have sufficient brake booster vacuum for one stop after vacuum is lost. If you don't, your check valve isn't holding the vacuum on the booster.

Try a vent tube tie for the other problem. I haven't done it myself, but I've been told that works.

Wait, you have an Edelbrock carb. Can't say for sure if the vent tube tie works on those.
