Oil Pressure Problem

Engine: 3.1L, 4.7L
Transmission: 700r4, 45RFE
Axle/Gears: 3.23 open, 3.55?
Oil Pressure Problem
Ok so i store my car in a garage for the winter. Went out there today cause i was finishing up the custom amp rack and stereo install and i started it up while tuning the amps. Oil pressure gauge reads 80 when first started. It stayed there for hmmm idk 2 mins or so. It slowly dropped to 40 after prolly another 7 mins or so. Then i reved it just a tad(2200) and the oil pressure goes up to 80 like it was a boost gauge!? Then would slowly settle back down to 40 then if reved again went up to 80 again. Why would it build up that much oil pressure when its reved? oh ya forgot to say it is like 7 degrees here right now. Today it was 20 which is really high for what we have had. i went snowmobiling all day :-). Is there an easy way to see if maybe the gauge or sending unit is broke or not working right? If it is working right what would cause it to build up that much pressure when the throttle is applied?

Cold oil is thick. 7 minutes of just idling doesn't warm it up all that much.

ok thanx...i was hoping it was just the cold weather. I get worried fast tho. My car is my baby. Ill pick a long summer drive in the curvy roads of the back country woods over spending a night with a women any day.
