low speed cruising sucks

i have an issue when im at cruising speed, mostly low speeds (25mph) where i'll roll on to the throttle and the car sputter then catches up with its self, untill i get onto the throttle harder. when i hammer the throttle it pulls through the rpm's great,which makes me think my timing is good, it only happens when i ease onto the throttle. my other thoughts are edelbrock carb. fuel blend screws on the front of the carb.,fuel pressure or my exhaust is too small.
to tune eddy carbs i have been tought to turn the front screws in one at a time until they affect the idle then back them out one full turn, do the same for both does that sound right?
here are the details of my car.
355 gmpp 2.02 heads 64cc combustion chamber, eddy performer intake and 600cfm carb, msd distributor dynomax headers and single 2.5" flowmaster exhaust, electric in tank pump with regulator set at 5psi,th350 2500 stall, 3.27 9 bolt rear end

what size cam and are you running a vacuum advance , two very important things to consider

282/292 cam .465/.488 lift and yes vacuum advance, i hooked my vac. advance up to the port to the drivers side port on my edelbrock carb, set the advance (vac. advance disconnected) to 34 degrees btdc and let my idle advance be where it wants, took it for a drive and was having the same hesitation while cruising, i then turned my fuel pressure up to about 7psi and it the hesitation went away for the most part. can i go higher with my fuel pressure? that seemed to have helped.

If your exhaust was too small, it'd be limiting your rpm at higher revs, not affecting moderate rpm like you should have at 25 mph. That's a big cam for a street 350. Vacuum advance should be directly off manifold vacuum. IDK where that port goes, but if the other end is above the throttle blades, don't use it.

yeah the motor was built when i was younger and is over cammed, just working with what i've got now, i do have my vac. advance running off maniflod vacuum. i am just wondering about my fuel pressure now, is 7-10 psi alright?

Another thing to pay attention to is what your distributor is doing. My 74 truck w/ 454 would pull the same stunt. Finally the mechanical advance in the distributor died. Hence, the truck wouldn't even start!

Just something else to check up on.

Mechanical advance in the dizzy has nothing to do with starting.

well it has been my experience that with eb carb i think the pass vacuum port is full time and one isnt ,chk eb website they tell you everything about their carbs , another thing i do, in eb carbs there is a counterweighted vacuum assisted air valve that triggers low rpm carb signal , what i do is drill two 1/8 inch hole in each valve to remove weight this makes for better throttle response we havae two 750 s on our indy headed wagon and it sings like fuel injection also get a calibration kit you may need to change needle seat springs to a lighter setup , check their calibration chart online it also will give you the proper jet setup , theres a hundred different things you can do to eb carbs hope this helps you man the cam is fine you just have to get the correct tune up for it , zeke

7 psi may be a little on the fat side for a street car , are you running a regulator and a return line ,just something else i thought of ,zeke

yeah mallory fpr and a return line, i think the calibration kit is my next option, increasing my fuel pressure helped and seems to be acting fine but not perfect, i just got it out for the spring and might be due to sub par gasoline.
